Vineyard: Field blend of adjacent vines (40+ year-old vines) of Touriga Nacional (70%), Tempranillo (20%) & Tinta Barocca (10%).
Fermentation: Hand-selected bunches were destemmed and co-fermented.
Extraction: Punch-downs were performed 4 times daily during fermentation. 20% of the juice was removed upfront to concentrate the flavours.
Pressing: Basket-pressed after 3 days of skin contact.
Aging: Alcoholic fermentation finished in barrel. Matured for 21 months in older French oak with the addition of staves to enhance the structure, followed by 13 months in the bottle before release.
Intervention: Unfined and Unfiltered.
Production: Extremely limited 450 bottles / 75 cases total).
