Winemaking Details
Vineyard: Field blend of adjacent vines (22 year-old vines). 50% Petit Verdot & 50% Malbec.
Fermentation: Hand-selected bunches were destemmed & co-fermented.
Extraction: Punch-downs were performed 4 times daily during fermentation.
Pressing: Basket-pressed after 7 days of skin contact.
Aging: Alcoholic fermentation finished in barrel. Matured for 18 months in neutral French oak to respect the fruit, followed by 15 months in the bottle before release.
Intervention: Unfined and Unfiltered.
Production: Extremely limited (300 bottles / 50 cases total).
