Our first white wine marks our departure from the comforts of young reds toward the uncharted territory of old-vine whites.
It is an homage to the unknown, crafted from vines that have breathed the Klein Karoo air far longer than we have. To work with such sensitive fruit is to recognize the courage to let go of the familiar and the grace to be led by the old into the new.
The wine reveals a sensory arc of evolution: a bold, whiskey-edged nose yields to lemon rind and an earthy whisper of mushroom & almond. On the palate, the comfort of the past lingers in a creamy texture, before giving way to the searing honesty of the desert, a signature of brine and saline, lifted by persistent stone fruit.
Winemaking Details
Vineyard: Single-Vineyard Selection (62 year-old vines). 100% Palomino.
Fermentation: Hand-selected 75% whole-bunch pressed & 25% destemmed with 20-hour skin contact. Fermented separately until dry.
Extraction: No punch-downs or pour-overs undertaken.
Pressing: Basket-pressed immediately (whole-bunches) & after 20-hours (destemmed portion).
Aging: Alcoholic fermentation finished in barrel for both portions, then blended & matured for 19 months in neutral French oak, followed by 4 months in the bottle before release.
Intervention: Unfined and Unfiltered.
Production: Extremely limited (270 bottles / 45 cases total).
